Cooking with Hemp – 5 Sensational Snack Recipes

While many of us try not to snack between meals, sometimes you just can’t help yourself. It’s okay to reach for a snack once in a while, especially if it’s healthy. These recipes not only show you how hemp can factor into the perfect snack, but it gives you some good-for-you recipes to try.

1. Hemp and Lemon Hummus

Hummus has to be one of the most versatile foods out there. It’s a great snack above all else since you can pair anything with it when it comes to dipping.

Ingredients:

  • 250 grams cooked chickpeas
  • 75 grams hulled hemp seeds
  • 2 large garlic clove
  • 2 lemons, juiced
  • 1/4 tsp lemon rind
  • 6 Tbs tahini
  • 2 Tbs hemp oil
  • 4 Tbs water
  • 1 tsp salt
  • 1 tsp ground coriander

Crush the garlic and finely grate the lemon rind. Combine all the ingredients in a food processor until creamy and smooth. A hand blender will also work. Garnish with a few more chickpeas and a little more coriander and serve with pita or some crunchy vegetables.

2. Cinnamon Turmeric Energy Bars

If you hit an energy slump in the middle of the day, like so many people do, this is the perfect snack. It tastes great and is full of all those good ingredients that help boost energy.

Ingredients:

  • 1/2 cup sunflower seeds
  • 1/3 cup hemp hearts
  • 1/3 cup pumpkin seeds
  • 1/4 cup shredded coconut
  • 1/4 cup chia seeds
  • 2 tsp cinnamon
  • 1 tsp turmeric
  • 1/4 cup creamy nut or seed butter
  • 4 Tbs honey or brown rice syrup
  • 1 Tbs melted and cooled coconut oil
  • 1/2 tsp vanilla extract (optional)

Line an 8×8 pan with parchment paper and set aside. Combine the sunflower seeds, hemp hearts, pumpkin seeds, shredded coconut, cinnamon, and turmeric into a bowl. Then, add in the nut/seed butter, brown rice syrup, melted coconut oil and vanilla extract. Use a sturdy, large spatula to combine everything. Transfer the mixture to the pan and refrigerate for 20 minutes or freeze for ten. Once set, take it out the pan and cut it up into squares. Uneaten bars will keep best in the fridge.

3. Protein Bars

This protein bar base is a great way to prepare a delicious snack and put your own riff on it. You can change things up by adjusting the flavor or adding in your favorite fruits, nuts, or seeds. It’s a great way to keep snacking interesting.

Ingredients:

  • 3/4 cup almond butter
  • 1/4 cup chia seeds
  • 1/4 cup hemp seeds
  • 2 Tbs unsweetened applesauce 
  • 1 Tbs coconut oil
  • 1/4 cup pitted dates
  • 1/4 cup dried raisins
  • 2 Tbs chocolate chips
  • 1/4 cup hemp seeds
  • 2 scoops chocolate protein powder (optional) 

If you omit the protein powder, up the quantity of hemp seeds by 2 additional tablespoons.

Combine all the ingredients in a food processor and mix until combined well. It should have a slightly moist and sticky texture. If it’s not sticky, add more coconut oil, one tablespoon at a time, until a thick dough forms.

Mold into a large rectangle with even thickness on parchment paper. Cover with plastic wrap and chill for at least an hour. Cut into bars and drizzle with melted chocolate if you like. Store in the refrigerator and freeze in an airtight container if not eaten within one week.

4. Hemp Seed Crackers

Great on their own or dunked in your favorite dip, crackers are the ultimate snack. They’re an ideal staple item to always have in your pantry for those just-in-case moments.

Ingredients:

  • 1/2 cup almond meal
  • 1/2 cup ground flax meal
  • 2 Tbs shelled hemp seeds
  • 1 Tbs coconut flour
  • 1/4 tsp fine sea salt (with a little extra for sprinkling on top)
  • 2 Tbs melted, unsalted butter
  • 1 large egg white

Preheat the oven to 300 degrees Fahrenheit first. Then, mix the almond meal, flax meal, hemp seeds, coconut flour, and sea salt in a large bowl. Pour the melted butter and egg white over the mixture and combine until dough comes together in a ball. Next, roll out the dough as thinly as possible between two sheets of parchment paper. Take off the top layer of paper and cut into small squares with a knife or pizza cutter. You can sprinkle a little extra salt on the crackers at this stage. Bake for 30 minutes or until the crackers are completely dry and crisp. Let cool before eating.

Crackers will keep for up to two weeks when stored in an airtight container.

5. Chocolate Hemp Smoothie

A smoothie may make a great breakfast, but it’s also the perfect snack when you know you’re going a long time between meals. 

Ingredients:

  • 2 Tbs cacao powder
  • 2 Tbs shelled hemp seeds
  • One cup unsweetened non-dairy milk
  • 1 1/2 frozen bananas cut into pieces
  • 1 Tbs almond butter
  • 1/2 tsp cinnamon
  • Pinch of salt

You may also want to add a scoop of protein powder, a little ice, and some sweetener for consistency and taste.

Pour the non-dairy milk into the blender first, followed by the bananas, and then the rest of the ingredients. Blend until smooth and creamy. If you need to adjust consistency, more milk will thin it out, while some ice will thicken it up. Pour into a glass and sip away.
